Crystallisation is nature's seal of approval. Real, raw honey crystallizes over time — it's a sign that it hasn't been over-processed or adulterated. The glucose in honey naturally separates and forms crystals, while the flavour remains the same.
If your honey has crystallized, it's doing exactly what pure honey should. To bring it back to liquid form, simply place the jar in warm water (not boiling) and stir gently. Avoid microwaving.
