The glucose in honey naturally separates and forms crystals, while the flavour and nutrients remain completely intact. If your honey has crystallized, it's doing exactly what pure honey should. To bring it back to liquid form, simply place the jar in warm water (not boiling) and stir gently. Never microwave — it destroys the enzymes that make raw honey special.
